Pumpkin Cold Foam Recipe for Iced Coffee

di LUXGAS Official su Sep 29, 2026
Glass of iced coffee topped with pale pumpkin cold foam and cinnamon

Pumpkin cold foam is a chilled, pourable cream-and-milk topping flavored with pumpkin and warm spice. It works over iced coffee or cold brew: the foam rests on the drink for a moment, then gradually blends into the first few sips.

This small batch makes enough for about two drinks. It uses a little pumpkin purée for real pumpkin flavor. Because cream, purée and frothers vary, use the texture notes below before adding it to a café menu.

Pumpkin cold foam recipe

Yield: about 2 drinks
Best for: iced coffee and cold brew

Ingredients

  • 120 ml (½ cup) cold heavy cream or whipping cream
  • 60 ml (¼ cup) cold whole milk
  • 1 tablespoon smooth, unsweetened pumpkin purée
  • 1 tablespoon maple syrup or vanilla syrup, plus more to taste
  • ¼ teaspoon pumpkin pie spice
  • A small pinch of fine salt
  • 2 glasses of iced coffee or cold brew, poured over ice

Use pumpkin purée rather than pumpkin pie filling. Pie filling often comes sweetened and seasoned, so it is harder to control the finished flavor. If your local double cream is much thicker than whipping cream, add a little more milk to keep the foam pourable.

Method

  1. Stir the pumpkin purée, syrup, spice and salt with a spoonful of the milk until smooth.
  2. Whisk in the remaining milk and cream. Taste and adjust the sweetness before frothing.
  3. Pour into a narrow, cold jug and froth with a handheld milk frother until the mixture thickens but still flows in a ribbon. Stop before it becomes stiff whipped cream.
  4. Divide between two iced coffees or cold brews and serve straight away.

If you see pumpkin fibers or spice clumps, blend the mixture briefly and pass it through a fine sieve before frothing. For a lighter topping, add a splash of cold milk; for more pumpkin flavor, adjust the purée a little at a time rather than adding a large amount at once.

How to make pumpkin cold foam smooth

Start with cold ingredients and a small amount of purée. Pumpkin adds flavor and body, but too much can leave the foam heavy or grainy. Mixing the purée with the syrup first helps it disperse before the cream and milk go in.

The finished texture should be softer than whipped cream: thick enough to sit briefly on the coffee, but loose enough to pour. A handheld frother or small whisk gives you direct control. Shaking the mixture in a closed jar can add air, but the foam is usually lighter and less stable.

Use it in a café drink

For a menu test, keep the coffee, cup size and foam portion consistent. A bold cold brew can carry more spice; a lightly sweetened iced latte may need less syrup. Record the final recipe by weight or volume, then check that each staff member can produce the same texture and portion during service.

Prepare only what your food-safety plan allows and keep dairy refrigerated. In the United States, the FDA recommends keeping the refrigerator at or below 40°F (4°C) and checking product labels for storage directions; its food storage safety guidance gives more detail. Elsewhere, follow local food-safety requirements and the instructions on the ingredients you use.

For a smoother high-volume batch, a café may prefer a pumpkin sauce or syrup that disperses evenly. Check the sweetness and texture of the specific product, then test it with the exact frother before serving.

If the menu includes a firmer whipped-cream topping, use a recipe made for a cream whipper. These whipped cream dispenser recipes offer examples for café and professional-kitchen service.

Pumpkin cold foam or pumpkin whipped cream?

Cold foam is soft and pourable, so it suits iced coffee and cold brew. Whipped cream is denser and holds its shape for longer, making it a better fit when you want a defined topping on a mocha or dessert drink. They are not interchangeable in a recipe or menu description.

For a thicker coffee topping, try the coffee whipped cream recipe, which includes three preparation methods for café drinks.

If you want to carry pumpkin flavor into a firmer topping, the flavoured whipped cream ideas offer more combinations for drinks and desserts.

Frequently asked questions

Can I use pumpkin pie filling?

It is better to use unsweetened pumpkin purée or a pumpkin syrup. Pie filling normally includes added sugar and spice, so the foam can become too sweet or strongly seasoned.

Can I make pumpkin cold foam without a frother?

Yes. Whisk it vigorously in a small bowl until it thickens and becomes pourable. It may take longer and produce a less even foam than a handheld frother.

Can I make it dairy-free?

Try a chilled barista-style plant drink labelled for foaming. The result depends on the product, and this cream-based ratio will not work the same way with every alternative. Test the exact carton before serving it to customers.

Can I prepare it ahead?

Froth shortly before serving for the best texture. If you prepare the dairy mixture earlier, keep it refrigerated, label it and follow the ingredient dates and your local food-safety procedures. Do not rely on one storage time for every kitchen.

Is pumpkin cream cold foam the same as whipped cream?

No. Pumpkin cream cold foam should remain soft and pourable. Whipped cream is thicker and holds a piped or dispensed shape.
